Method
- 1
Mix the chicken with curd, haldi, chilli powder, half the ginger garlic paste and salt. Cover and keep aside for 30 minutes.
- 2
Heat the oil in a heavy pan. Add the tej patta, then the onions, and fry on medium heat for 8 to 10 minutes until golden brown.
- 3
Add the rest of the ginger garlic paste and the green chillies and fry for 1 minute. Add the tomatoes and cook until soft and the oil starts to separate.
- 4
Lower the heat, add 2½ tbsp Prime Chicken Masala with 2 tbsp water and stir for 1 minute so it does not burn.
- 5
Add the marinated chicken and fry on high heat for 5 minutes. Pour in the hot water, cover and simmer on low heat for 20 to 25 minutes until the chicken is tender.
- 6
Check the salt, garnish with coriander and serve hot with steamed rice, roti or paratha.
Cook's tips
- For an Odia-style curry, add 2 potatoes, halved, along with the chicken.
- For a thicker gravy, cook uncovered for the last 5 minutes.
