Method
- 1
Mix the mutton with curd, haldi, 1 tbsp ginger garlic paste and salt. Cover and keep aside for 1 hour.
- 2
Heat the mustard oil in a pressure cooker until it just smokes, then lower the heat. Add the tej patta and onions and fry until deep golden brown.
- 3
Add the remaining ginger garlic paste and the tomatoes. Cook until the tomatoes melt and the oil separates.
- 4
Add 3 tbsp Prime Meat Masala with a splash of water and fry on low heat for 2 minutes.
- 5
Add the mutton (and potatoes, if using) and fry on high heat for 8 to 10 minutes, stirring, until the masala coats the meat.
- 6
Add the hot water, close the cooker and cook for 5 to 6 whistles, or until the mutton is soft. Let the pressure drop by itself.
- 7
Sprinkle the garam masala, simmer for 2 minutes, garnish with coriander and serve with rice or roti.
Cook's tips
- No pressure cooker? Simmer covered on low heat for about 1 hour, adding a little water when needed.
